Method

Prepare the dates
In a heatproof bowl, combine the chopped dates with 1 teaspoon baking soda. Pour the boiling water over them, stir well, and let the mixture sit for 10–15 minutes until the dates soften and absorb the liquid. -
Preheat the oven

Mix the dry ingredients
In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, cardamom, and a pinch of salt. Set aside. -
Cream butter and sugar
In a separate mixing bowl, beat the butter and brown sugar with an electric mixer on medium speed for 3–5 minutes until light and creamy. -
