If you’re looking for an easy, no-bake dessert to serve alongside a fresh cup of coffee, these coffee-infused date bites are hard to beat. They come together in minutes, chill quickly, and taste like little mocha truffles.

Ingredients

  • 8 pitted dates

  • ¼ cup strong brewed coffee, cooled

  • 1 cup coarsely crushed almonds (feel free to swap in walnuts or pecans)

  • ¼ cup unsweetened cocoa powder

  • 1 teaspoon chia seeds

  • Pinch of sea salt

  • Optional finish: extra cocoa powder, finely shredded coconut, or crushed nuts for rolling

Method

  1. Blend the base
    Place the dates and cooled coffee in a food processor. Pulse until the dates soften and start to form a paste.

  2. Add the dry mix
    Tip in the crushed almonds, cocoa powder, chia seeds, and salt. Pulse again until the mixture clumps together. (If it feels too loose, add one more date; if too sticky, sprinkle in a teaspoon of oats or almond meal.)

  3. Shape the bites
    With slightly damp hands, scoop out tablespoon-size portions and roll them into even balls.

  4. Chill
    Arrange the bites on a plate, cover, and refrigerate for 20–30 minutes so they firm up.

  5. Serve
    Roll in your favorite finish if desired, and present the bites cold next to a steaming espresso or cappuccino.
