For the caramel sauce:
- 3/4 cup white sugar
- 2 tablespoons liquid cream
- 50 g butter
For the cake:
- 1 cup pitted dates
- 1/2 tablespoon ground cardamom
- 1 cup boiling water
- 2 1/4 cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 4 large eggs
- 2 tablespoons vanilla extract
- 1/2 cup white sugar
- 3/4 cup vegetable oil
Instructions
- In a deep bowl, soak the dates in boiling water with ground cardamom for several minutes until they soften.
- Preheat the oven to 180°C (350°F) and place the rack in the middle position.
- Sift the flour, baking powder, cinnamon, salt, and baking soda into a separate bowl.
- In an electric mixer, beat the eggs with the sugar on medium speed for 3 minutes until the mixture turns creamy and light in color. Add the oil, vanilla, and soaked date mixture, and mix for another minute until well combined.
- Gradually add the dry ingredients to the egg and date mixture in 3 batches, mixing gently with a hand whisk until fully blended.
- Pour the batter into a greased and floured cake pan. Bake for about 40 minutes until fully cooked.
- Turn the cake onto a wire rack and let it cool completely.
To prepare the caramel sauce:
- Place the sugar in a saucepan over medium heat and stir for about 3 minutes until completely melted.
- Add the butter and cream while stirring continuously until the lumps disappear and the sauce becomes smooth.
- Let the caramel sauce cool completely.
