For the Cake:

  • 1¾ cups all-purpose flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • ½ tsp ground cinnamon

  • ¼ tsp ground cardamom

  • Pinch of salt

  • 1 cup soft dates, pitted and finely chopped

  • 1 cup boiling water

  • 1 tsp additional baking soda

  • ½ cup unsalted butter (room temperature)

  • ¾ cup light brown sugar

  • 1 large egg (room temperature)

  • 1 tsp vanilla extract

Method

  1. Prepare the dates
    In a heatproof bowl, combine the chopped dates with 1 teaspoon baking soda. Pour the boiling water over them, stir well, and let the mixture sit for 10–15 minutes until the dates soften and absorb the liquid.

  2. Preheat the oven
    Set your oven to 175°C (350°F). Grease and lightly flour a cake pan.

  3. Mix the dry ingredients
    In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, cardamom, and a pinch of salt. Set aside.

  4. Cream butter and sugar
    In a separate mixing bowl, beat the butter and brown sugar with an electric mixer on medium speed for 3–5 minutes until light and creamy.

  5. Incorporate the egg and vanilla
    Add the egg and vanilla, mixing until fully combined.

  6. Combine the mixtures
    Gradually add the dry ingredients to the butter mixture, alternating with the softened date mixture. Mix on low speed until just combined—do not overmix.
